There is something deeply satisfying about pulling a basket of carrots from the soil in November, or lifting a swede so heavy it needs two hands. Root vegetables are the backbone of a smallholding winter kitchen. They are generous, dependable and store well without electricity or fuss. With a little planning, you can enjoy your own carrots, parsnips, beetroot and swedes from autumn right through to early spring.
Roots reward good soil preparation. Choose a sunny spot that hasn’t been manured recently for carrots and parsnips — fresh manure makes them fork and split. Instead, dig the ground deeply in autumn, remove stones and add well-rotted compost the previous season. Beetroot and swedes are more forgiving and appreciate a bed that held a previous crop of peas or beans.
For winter storage, choose maincrop varieties. Carrots like ‘Autumn King’ and ‘James Scarlet Intermediate’ store beautifully. Parsnips such as ‘Tender and True’ and ‘Gladiator’ are reliable. Beetroot ‘Boltardy’ and ‘Detroit’ are classic choices, while swede ‘Ruby’ and ‘Marian’ bulk up well. Sow seeds thinly in drills — 1cm deep for carrots, 1.5cm for parsnips and swedes, and 2cm for beetroot. Space rows 30cm apart.
Thinning is the secret to good roots. When seedlings are 2–3cm tall, thin carrots to 5–7cm apart, parsnips to 15–20cm, beetroot to 10cm, and swedes to 25cm. Do this on a still evening and water afterwards to settle the soil. Carrot fly is the main pest — cover rows with a fine mesh barrier from sowing until harvest, or grow resistant varieties. Keep plants well watered during dry spells, but avoid overwatering, which can cause splitting.
Timing matters. Carrots, beetroot and swedes are ready from late summer onwards, but for winter storage, lift them before the ground freezes hard. Parsnips are best left until after the first frosts — the cold converts starch to sugar, giving them that sweet, nutty flavour. Choose a dry, mild day. Use a garden fork, inserting it well away from the roots to avoid spearing them. Lift carefully, easing each root from the soil.
Twist off the foliage rather than cutting it, leaving a 1–2cm stub — this prevents the root from bleeding and rotting. Do not wash the roots. Instead, let them dry on the soil surface for an hour or two, then brush off loose earth. Any damaged or cut roots should be eaten first, as they won’t store.
There are three dependable methods for keeping roots through winter. Choose what suits your space and quantity.
Check stored roots regularly, removing any that show signs of mould or softness. With a little care, your carrots will stay sweet, parsnips rich, beetroot earthy and swedes firm for months. There’s no greater winter comfort than a hearty root mash, a tray of roasted vegetables, or a warming soup made from your own smallholding. Sow, grow, lift and store — and your kitchen will be rewarded long after the last leaf has fallen.
